Topic: problems with cash payment of direct delivery

The system allows for delivery without bill paid in cash
Where payment is stored?

I need to make sales without an invoice, and the system tick me as "outstanding"  one delivery

You can entry payments separately, but you can only allocate them against invoiced delivery.
