To have FrontAccounting in Italian I have to install the language on the server?

It has to be in order to be displayed properly by FA. Take a look at this ..search the forum for locales and you will be guided what to do according to your OS.

Just add a stanza for your language in lang/installed_languages.inc.
Now you are good to go.

I downloaded the files, but it seems to me to be too complicated.
Already downloading from GitHub is not really an easy thing.
Then I do not understand how to fill out the form.
The Encoding field should be iso-8859-1, but then I get the error back:
"The marked language is the current language which cannot be deleted."
