Yeah, you can set up variations for the same item by size or color, and assign different prices to each. Most systems or platforms let you add these as options when you create the item, like "Small, Medium, Large" for sizes or different colors for clothing.

Thanks, I had thought so of using items categories but got afraid as I can end up with huge list of categories if for instance I have to create a new category for every product variation.

Is there a way I can define one type of items but with variations and sizes that differs in pricing. Example beverages such as sodas can be sold in different bottle sizes.
